I'm asking for help because I don't understand if I turn off, say, ADBLUE, then I have to do something with the car.

or if I turn off the DPF, then I have to remove the particulate filter.

Seems like the only version that works is the oldest one; all the other versions have a loading bar that never quits.

For the ADBLUE, It depends on the solution, sometimes it's needed to disconnect the adblue pump, nox sensor or SCR module fuse (if there). Some solutions from this soft maybe be incomplete even if the ECU is supported (ex: Renault SID310). Most of the time, a good adblue removal solution doesn't require to disconnect anything.

For the DPF: if it's logic is removed, he won't regenerate and it will clog the DPF, so physical removal is needed (replacing by a downpipe or breaking it). Same as before, some solution are incomplete, i had issues with a DPF OFF on OPEL EDC17C59 which kept regenerating the DPF (smoking a lot) with DPF message on the instrument cluster. I had to use another solution for that
