has new batteries main and aux (i put them in) im adding in 2 newVictron Energy MultiPlus-II 12V 30...
That is a beast of a setup. You definitely won't have to worry about voltage drops during flashing with that kind of capacity on board.
Since it is an ex-ambulance, does it have the PSM (Parametric Special Module) installed? That is usually the module that handles the interface between the vehicle electronics and the third-party ambulance equipment.
It is a gold mine for campers/conversions because you can program logic into it (like "if aux battery < 12V, start engine" or "high idle switch"). You can configure all that logic directly in DTS Monaco once you get your system running.
